Chicken Curry.
5 lbs. Thighs or whole chicken
1/8 c. salt
1 tsp. black pepper
2 tbsp. sugar
2 tbsp. curry powder
1/2 can (6 oz.) coconut milk
2 tbsp. chopped onion
1 tsp. chopped garlic
2 lbs. potatoes (reg. or sweet)
2 tbsp. oil
Cut chicken into square chunks of 2 inches and marinate with salt, sugar and pepper. Cut potatoes into chunks smaller than chicken. Deep-fry potatoes in hot oil about 5 minutes.
Pour about 2 tablespoons of oil in a pan, wait 1 minute for oil to get hot. Put onion in and stir fry about a minute less (DO NOT OVERDO).
Add garlic and chicken at the same time and saut茅 chicken for 10 minutes. Add curry powder and continue saut茅ing for another 10 minutes. Then pour everything into a pot. Add water enough to cover mixture. Cook 15 minutes at medium-low heat. Cook another 10 minutes after adding potatoes.
Finally, pour coconut milk in and mix well. Remove from heat. Serve hot with French bread.What are some good Chicken recipes?
Chicken Tetrazinni:
Ingredients: 5-6 chicken strips or 4-5 boneless skinless breasts, Spaghetti, 2 T butter, 2T flour, salt and pepper to taste, 1 cup Velveeta, cuved, grated cheddar and/or parmessan cheese
Boil chicken until cooked thoroughly, cube, and reserve broth. Boil water for spaghetti and cook according to package directions. Place 2 T butter and 2 T flour in a saucepan and heat until butter is melted and it is mixed well, stirring constantly. Add salt and pepper. Add 1 cup of chicken broth and stir until thickened. Add Velveeta cheese and stir until melted and mixture is smooth. Add chicken and cooked spaghetti and mix well. Transfer to a casserole dish and top with cheddar and/or Parmessan cheese(s). You can sprinkle the top with parsley if you wish for added color. Place in a 350 degree oven until cheese is melted and serve. You can add diced onion, celery, or mushrooms to the mix if you think that your family will prefer it. Mine likes it as is.
Chicken and Dumplings:
Ingredients: whole chicken, 3 cups flour, 1.5 tsp baking powder, 1 T salt, 1 beaten egg, 1 cup broth (from cooking the chicken
Boil the chicken in a large stockpot until completely cooked. Remove skin and break the meat off in pieces. Scoop out one cup of broth for dumpling batter and leave the rest in the pot on the stove on low. Mix all dry ingredients and make an indentation in the center. Beat the egg into the chicken broth until fairly smooth. Pour mixture into the dry mixture and mix with a fork until well combined. Dough will be VERY sticky. For easy cleanup, cut two pieces of waxed paer about 16'; in length and tape to counter. Cover with flour in a small layer and put dumpling dough on it. Flour the top of the dough and roll it out. If the dough sticks to the rolling pin, add more flour. Roll very thin and cut into strips about 1'; by 2-3';. I like to use a pizza cutter for this. Turn the heat on the broth up to boiling and drop the stips of dough in. If they aren't coming up easily, you did not use enough flour--not a tragedy, it will still taste good, but not look as tidy. Stir the dumplings in ever so often as you are adding them so that they don't clump together. After dumplings have cooked for about 20 minutes, add the chicken pieces, stir, and heat to boiling.
Chicken and Rice:
In an oblong casserole dish combine:
1 cup long grain rice (NOT Minute Rice)
2 cups water
1 tsp. curry powder
Boil about 6 chicken tenders and cube. Lay the cooked chicken pieces on the rice mixture. Sprinkle one package of onion soup mix on the chicken. Add a mixture of:
1 can cream of mushroom soup and 1/2 cup water. Pour on top of the soup and chicken. Bake for one hour at 350 degrees.
My family loves all three of these, and my 9 year old can be pretty picky. Also, Tyson has whole refrigerated chickens that are already seasoned and everyhting. They just need to be popped in the oven and cooked for 35-40 minutes and are really good.
Picky can mean a million different things. Does that mean they only pick at their food and leave a lot on the plate? Does that mean each has their own likes/dislikes? (If so, we don't know what those are based on your answer, so are really not going to be very helpful.) Does picky mean that they only like plain, bland food with nothing spicy? I know some people who consider themselves ';picky'; because they prefer very ';haute cuisine'; food and wouldn't be caught dead with a plate of mashed potatoes and gravy.

COLA CHICKEN

(My favorite: Wings or Ribs)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)
Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from
sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!
You can double the recipe and use more pieces of
chicken....wings...would be ideal...add some hot
sauce....presto ';Hot

I have used Ribs, just as good.
I tried this recipe with 'meatballs'....was equally
as good...served over rice.
I found another variation.....omit the catsup and add a small
jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup....not).
You'd think a recipe with only '3' ingredients couldn't be
messed up....wouldn't you??
Well...while I was preparing to fix the 'Cola Chicken' recipe
using Salsa.....I was also trying to carry on a conversation with my
husband...(just proves...I can't do two things at once)....mixed
Salsa %26amp; Catsup (before I realized I was supposed to leave out
the catsup) %26amp; Cola........still turned out really tasty (to me)...might
be a little sweeter than some of you like.
I fixed chicken wings, (using the above recipe)
but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).
Finally....!! I fixed the 'SALSA' chicken......that's good , too.
Another (bright)idea.....I thought of trying......replace the
catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!
Fixed the shrimp with cocktail sauce......eh...wasn't all that
great...was OK...probably won't be fixing it again.
Also tried beef stew cuts......that was pretty good.....I can see
myself making this again.
Served both over rice.....think the stew cuts would have been just as
good over noodles.
How about using the little cocktail weiners/sausages?
CRUNCHY ONION CHICKEN
1 1/3 cups French鈥檚 Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten
LIGHTLY CRUSH:
Onions in a plastic bag.
DIP:
Chicken in egg
COVER:
With onion crumbs, press firmly to adhere to chicken.
BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.
Mushroom Chicken
4 boneless/skinless chicken breast (or any pieces you like)
1 can cream of mushroom soup.
1 can water
Place chicken in crock pot (or sauce pan for stove top cooking)
mix soup %26amp; 1 can of water together
pour over chicken
cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.
Serve over noodles or rice or dressing....or???
