If I do use peppers in my crockpot recipes, I cut them up and put them in about the last 30 minutes of cooking. That way they won't get too mushy.
I would recommend Chile Verde. The recipe is versatile where you can substitute chicken or pork.
The recipe below calls for browning the meat before transferring to the slow cooker. I've tried the recipe by browning the meat and by just tossing everything into the slow cooker. Both ways turned out good.
With some beans, rice and tortillas you have a great start on Chile Verde burritos.
Chicken breasts do not do really well in a slow cooked recipe..not enough fat to keep them moist so they end up really dry....I always throw a family sized package of chicken thighs (skin removed) into my crockpot with half a bottle of my favorite barbeque sauce and about 3/4 cup of water...and set on low for anywhere between 4-8 hours...depends on what we are doing that day..they turn out great and go well served with rice or noodles or even potatoe salad. For pork or beef roasts I toss them into the crock pot with a small (12 oz. or so) can of flavored chopped or crushed tomatoes..they come in Mexican, Italian, garlic and herb, jalepeno...etc. Choose whatever flavor you enjoy, throw it all into the crock pot and dinner will great you at the door...When I am really lazy, I just take the frozen roast out and put it into the crock pot frozen. Great served over mashed potatoes.

Here's the best recipe I've found for chicken breasts for the crockpot-bbq chicken sandwiches.
Place defrosted chicken breasts in crockpot. Slice a sweet onion and place slices on top of breasts. Pour bbq sauce of your choice over chicken and onions-enough to cover chicken (I end up using an entire bottle of KC Masterpiece.) Cook low for 6 hours, shred chicken with a fork and continue cooking for 30 mins or so.
You can serve this on hamburger buns but I usually get good rolls from the store. I also serve this with oven fries for a nice lowfat meal. Sorry it doesn't use peppers but it's quite flavorful!

What are some easy chicken recipes?
Now that my bf and I live on our own, we need to come up with dinners each night. We have the basic dinners...i.e. tacos, pizza, steak %26amp; potatoes...etc etc.
I also want to know how to make chicken roulade? There are so many recipes on it, but I want a simple one. It's a chicken ';roll';, right? You can put stuffing and apples and grapes in it?What are some easy chicken recipes?
Yes you can stuff what ever you like into the roll.Cheese,vegetables...
Radicchio and Mushroom Chicken Roulade
Ingredients
Serves 2
* 2 boneless, skinless chichen breast halves
* Coarse salt
* 1 small head radicchio, cored, leaves separated
* 3 tablespoon unsalted butter
* 2 tablespoon extra-virgin olive oil
* 3 shallots, finely chopped
* 8 ounces shiitake mushrooms (half chopped, half cut into 1/2-inch thick slices)
* 1 chicken liver (reserved from Stuffed Noodle Soup), finely chopped
* 1 tablespoon finely chopped fresh sage
* Freshly ground pepper
* 1/2 cup Marsala wine
* 1/4 cup freshly shredded mozzarella cheese
* 10 cipollini or pearl onions, peeled
* 1/4 cup chicken stock (reserved from Stuffed Noodle Soup)
Directions
1. Using a chef's knife and starting on 1 long side, slice open chicken horizontally, stopping about 1/2 inch before reaching opposite side. Open each like a book, and place between 2 pieces of plastic wrap. Pound with the flat side of a meat mallet to 1/4 inch thick. Refrigerate in plastic until ready to use.
2. Prepare an ice-water bath; set aside. Bring a medium pot of water to a boil; add 1 tablespoon salt. Add radicchio, and cook 30 seconds. Using a slotted spoon, transfer to ice-water bath to cool. Transfer radicchio to a plate lined with paper towels, and pat dry. Remove tough core from each leaf. Set radicchio aside.
3. Heat a medium saute pan over high heat. Add 1 tablespoon each butter and oil. Add shallots, and stir. Add chopped mushrooms, chicken liver, sage, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring, until liver is no longer pink, 2 to 3 minutes. Add 1/4 cup Marsala, and cook until liquid has evaporated, about 30 seconds. Set aside to cool.
4. Remove top layer of plastic from chicken. Season with salt and pepper. Spread half the mushroom mixture over one breast, leaving a 1/4-inch border. Place 3 or 4 radicchio leaves over mushroom mixture. Sprinkle with half the cheese. Using plastic wrap to lift and guide chicken, roll up; twist plastic at both ends. Repeat with remaining breast. Refrigerate at least 1 hour (up to 3).
5. Preheat oven to 450 degrees. Unwrap chicken bundles; tie with kitchen twine. Season with salt and pepper. Heat 1 tablespoon butter and the remaining tablespoon oil in an 8-inch ovenproof skillet over high heat. Place chicken, seam side up, in skillet. Add cipollini. Cook, turning chicken and stirring cipollini occasionally, until chicken is brown on all sides. Add remaining 1/4 cup Marsala and the stock. Cook, swirling pan occasionally, until slightly reduced, about 30 seconds.
6. Cover, and transfer pan to oven. Bake until chicken has cooked through, about 15 minutes. Transfer chicken and cipollini to a plate. Wipe out pan; place over high heat. Add remaining tablespoon butter. Add sliced mushrooms, and cook, stirring, until golden, 2 to 3 minutes.
7. Remove twine from chicken. Thinly slice chicken crosswise, and serve with cipollini and sauteed mushrooms.

The simplest thing to do with chicken is just grill it with some seasonings like garlic, pepper and salt. However, doing that over and over gets boring.
I've done both recipes on this link and they are very tasty and easy to throw together.

Do you have a crock pot?
I love to throw a whole chicken in the crockpot on low for 8 hours. You just remove the innards, rinse it, throw it in the crock, cover it with a season salt or garlic powder/salt or just salt and pepper, put the lid on, turn it to low. Do not open for 8 hours. Remove it and eat! It's soooo good and moist. Whole chickens are fairly inexpensive too.
when its late at night and im hungry, i would make this:
a thick whole wheat bread cut in the middle and inside it i inserted a fried egg and cheese then I add some lettuce and chicken. It tastes really nice, and it has a unique shape too. Like a bag with food inside... its practically a sandwich
Chicken Parmesan w/Spaghetti Carbonara
Chicken Broccoli Alfredo
basic white sauce :i.e., a half cup each of butter flour to make a roux . add 4 cups milk, salt and pepper to taste, stir constantly until milk starts to bubble and thicken add Parmesan cheese I use A LOT like a cup or more but you can add to taste. Remove from heat.
In a large pot boil salted water, add broccoli cook until tender use a slotted spoon and take the broccoli out and place in a strainer. Place a pound of Penne or linguine in the same pot you just cooked broccoli in [to save dishes, and clean up time, and you don't even have to change the water =.)] follow directions on the box.
Cut your chicken into 1 inch cubes and cook slowly over medium to medium high heat adding pats of butter ( you will see a lot of liquid collect in the bottom of the frying pan it's okay to drain that in the sink. just add a little more butter after.) When the chicken is cooked, you can add the broccoli on top of the cooked chicken, if you start the chicken right when you put the water on for the first time it should finish up about the same time the pasta needs to be strained. Use the strainer you had the broccoli in and strain your pasta. If you want to save on dishes and only use one pot, leave the pasta in the strainer and make your sauce.
You can serve it layering it pasta on bottom, white sauce, broccoli and chicken on top. But my family likes it if I mix all together if that is the case you can just put the pasta and the chicken and broccoli in the large pot you used to make the white sauce, boil the broccoli and pasta.

A roulade doesn't need to be fancy or difficult the hardest part is butterflying the chicken breast, the only way to get good at that is the practice. If you didn't want to be bothered by making rice or homemade stuffing you could probably get away with using stove top in all reality, along with some veggies to liven the taste a little, or you could stuff it with ham, and Swiss cheese for a take on chicken cordon bleu.
If you would like any other recipes feel free to ask!

Any good chicken salad recipes?
I would like a good chicken salad recipe for sandwiches. I like sweet and salty. I really like the chicken salad from Michael's deli, if this is a chain. I am not really looking for a very difficult recipe or one with lots of ingredients.Any good chicken salad recipes?
Cooked and diced chicken
A small amout of fresh onion-diced
A couple celery spears--slices thin
A couple gerkin pickles-diced small
Mayo
Salt
pepper
celery seed-to taste
mix and serveAny good chicken salad recipes?
Put the following in the food processor: cooked chicken (no skin), salt, pepper, relish (since you like sweet), a tiny bit of onion, a tbs. or so of celery, and a good spoonful of mayo. Pulse until well mixed.
It's about as easy as you can get, and pretty good! Many delis make their chicken salad in a food processor.
Chicken Salad
4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper
In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.
In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
Cook's Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.
POACHED CHICKEN FOR SALADS
10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds chicken breasts halves, on the bone and fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium canned
Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.
Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.
Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings
This salad can be served as a sandwich or as a salad. I've used it to stuff cucumbers with as well. It is always a crowd pleaser and incredibly easy to make.

What is the best type of wine for chicken Breast recipes?
Here's the thing. I like hard alcohal. I also like sweet wine, but I'm lost when it comes to a type of wine to have with a spicy chicken dish. Any sugestions?What is the best type of wine for chicken Breast recipes?
A spicy chicken dish calls for either Riesling or Gewurtraminer. Riesling are typically sweet (which you would probably like). Gewurtaminer can be either sweet or citrusy.
Learn more about food and wine at: http://www.cheers2wine.com/food-and-wine鈥?/a>What is the best type of wine for chicken Breast recipes?
Try a Reisling,or Chenin Blanc. They're light ,sweet and fruity. Either in your chicken recipe, or in a glass. ;-)
Wine doesn't pair well with spicy food, I recommend picking up a really hoppy beer, Sierra Nevada Bigfoot Barleywine may be something you could appreciate.
With a spicy chicken dish, I would recommend either a real crisp and light white, like Pinot Grigio, or, a fruity light red like Pinot Noir.
.
Usually you want a white wine with chicken (the general rule is white meat - white wine, red meat - red wine) Try a Cabernet or Chardonnay
