COLA CHICKEN


(And more variations of recipe)


(My favorite: Wings or Ribs)





4 skinless, boneless chicken breasts


1 cup catsup


1 12oz. can cola (pepsi, coke, etc.)





Put chicken in a non-stick pan.


Mix together catsup and cola, pour over chicken.


Bring to a boil. Cover, reduce heat and cook 45 minutes.


(turning chicken a few times, while cooking...to prevent from


sticking to pan)


Uncover, turn up the heat and continue to cook until the sauce


becomes thick and adheres to the chicken.


It turns into the most incredible BBQ sauce. Yummmm!





You can double the recipe and use more pieces of


chicken....wings...would be ideal...add some hot


sauce....presto ';Hot


Wings';!


I have used Ribs, just as good.





I tried this recipe with 'meatballs'....was equally


as good...served over rice.





I found another variation.....omit the catsup and add a small


jar of Salsa (any variety).





I have tried using Salsa (omitting the catsup....not).


You'd think a recipe with only '3' ingredients couldn't be


messed up....wouldn't you??


Well...while I was preparing to fix the 'Cola Chicken' recipe


using Salsa.....I was also trying to carry on a conversation with my


husband...(just proves...I can't do two things at once)....mixed


Salsa %26amp; Catsup (before I realized I was supposed to leave out


the catsup) %26amp; Cola........still turned out really tasty (to me)...might


be a little sweeter than some of you like.





I fixed chicken wings, (using the above recipe)


but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





Finally....!! I fixed the 'SALSA' chicken......that's good , too.





Another (bright)idea.....I thought of trying......replace the


catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


Fixed the shrimp with cocktail sauce......eh...wasn't all that


great...was OK...probably won't be fixing it again.





Also tried beef stew cuts......that was pretty good.....I can see


myself making this again.


Served both over rice.....think the stew cuts would have been just as


good over noodles.





How about using the little cocktail weiners/sausages?











CRUNCHY ONION CHICKEN





1 1/3 cups French鈥檚 Original French Fried Onions


4 boneless skinless chicken breast halves


1 egg, beaten





LIGHTLY CRUSH:





Onions in a plastic bag.





DIP:


Chicken in egg





COVER:


With onion crumbs, press firmly to adhere to chicken.





BAKE:


Preheat oven to 400 degrees.


Place chicken on lightly greased baking pan.


Sprinkle with additional onion crumbs, if desired.


Bake for 20 minutes or until no longer pink in center.








Mushroom Chicken





4 boneless/skinless chicken breast (or any pieces you like)


1 can cream of mushroom soup.


1 can water





Place chicken in crock pot (or sauce pan for stove top cooking)


mix soup %26amp; 1 can of water together


pour over chicken


cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.

although i like chicken a lot, i can find myself getting a lil tired of it....but...i do have some creative yet simple recipes with chicken in it so i wont get as tired of it.

HUNTERS CHICKEN~





1 WHOLE CHICKEN CUT UP


3 MEDIUM TOMATOES CUT UP


1 MED ONION CUT UP


2 (6 OZ) CONTAINERS OF MUSHROOMS


3-4 TABLESPOONS OF FLOUR


2 CANS OF CHICKEN BROTH


8 OZ WHITE WINE


OIL


SALT


PEPPER





HEAT OIL ON MED/LOW FIRE


ADD THE CHICKEN


BROWN CHICKEN


THEN ADD CUT UP VEGGIES (ALL OF THEM)


THEN ADD THE FLOUR


STIR VERY GOOD!!


THEN ADD THE WINE


ADD PEPPER N SALT


THEN SLOWLY ADD THE CHICKEN BROTH


THEN PUT THE FIRE ON LOW


AND STIR ALL THE INGRDIENTS


AND THEN PUT THE LID ON AND LET IT SIMMER TILL MEAT AND VEGGIES ARE COOKED AND THE SAUCE IS OF A GRAVY LIKE CONSISTANCY





SERVE WITH WHITE RICE

what you need:


canned mushroom soup


salsa


chicken


spiral pasta





bake chicken in canned mushroom soup mixed with salsa...of course if you like a litle spicy...you can use the Picante mild salsa...just pop it in the oven until chicken is fully cooked...on the side boil the spiral pasta until fully cooked.....when finished place the chicken and mushoom soup over the pasta on your plate... and eat with bread and a salad...it's pretty good and so simple to make.....


***CREAM OF MUSHROOM SOUP***
We love and eat chicken a lot here too, so have to know several ways to cook so not always the same.





some of our favorites are





3 Chicken breasts, boned, skinned and split


1 can cream of chicken soup


1 can cream of mushroom soup


1 can cream of celery soup


1/4 cup white wine


2 Tbls. chopped onion





in 9 x 13 baking dish mix soups, wine and onion. Add chicken breasts, spooning soup over top. Bake uncovered 350 for 1 hour.





Chicken Casserole:


3 Stacks Ritz Crackers, smashed


1 1/2 sticks margarine, melted


4-5 cups cooked chicken, cubed


1 cup hot chicken broth


1 10 3/4 oz, can of cream of chicken soup


1 pt. sour cream


2 TBS. mayonnaise


Parmesan cheese





oven @ 325 degrees. Combine smashed crackers and melted margarine. pack half on bottom of 9 x 13 baking pan. Do not overcook chicken. Put chicken on top of cracker mixture. Mix remaining ingredients except parmesan cheese and pour over top of chicken. Put remaining crackers on top. Sprinkle heavily with parmesan cheese. cook 30-40 min.





Easy Chicken Tetrazzini


1/2 package of fine noodles


1 can cream of mushroom soup


1/4 sm jar parmesan cheese


1 4oz can mushrooms, drained


2-3 cups shredded chicken


1/2 pint sour cream


3 TBS. Sherry





Boil noodles in salted water 8 min. Combine noodles, soup, cheese, mushroom and chicken in a bowl. Stir in sour cream. Place in a greased baking dish and bake @ 350 for 30 minutes. Before serving stir in sherry and some more cheese.

this is great for hangover sunday lunch/dinner





bread chicken breast with some seasoned flour


heat 2 T oil in skillet over medium high heat


fry chicken till brown on one side


turn chicken over reduce heat to medium and continue to fry till done (you may have to turn it to keep it from burning and to finish cooking it)


remove chicken breast--keep warm


Gravy:


in the remaining oil mix 2 T seasoned flour and whisk to make a roux.


stir in 2 C milk and whisk to break up lumps


bring gravy to boil, reduce heat and simmer 2 minutes


season with salt and pepper to taste.


put chicken breast on a bed of rice or mashies cover with gravy and enjoy.

I hate those ';got the munchies'; comments just because you're asking about food.





Anyways, I love chicken. I think I do eat it every day.





One easy way to cook it is in the slow cooker. Just toss in some chicken, cover it with Italian dressing, and let it cook on low for about 4 hours. It's delicious. I like to let it cool then have it on a salad.





Another easy way is to just season some boneless, skinless breasts with your favorite seasonings, toss it in a pan with a little bit of olive oil, and cook it on both sides until it's done. I use either Tony Chachere's Creole or Lawry's Lemon Pepper. The lemon pepper is my favorite. Then, toast some kaiser buns and have chicken sandwiches with all your favorite toppings.





You can also sear the breasts on both sides, put them in a casserole dish, melt some Velveeta with a little butter and milk, mix in a can of seasoned canned tomatoes, pour over the top, and bake it until the chicken is cooked through.





Sorry, I don't know how long to cook stuff. I just do it until it's done.

We enjoy McCormick's Grill Mates packets esp. the Southwestern kind. Also, love Emeril's Essence.
We eat chicken about twice a week. My favorite is chicken marinated in italian dressing and then cooked on the grill. Long enough so the outside is getting crunchy but the inside is soo juicy and moist.

Buffalo Chicken Wrap





1 TBSP. MAYO


1 TSP. HOT SAUCE


1 TORTILLA


1 LETTUCE LEAF


6 SLICES SHAVED CHICKEN





MIX mayo and hot sauce.





FILL tortilla with sauce, lettuce and chicken; roll to eat.
I soak the chicken parts in buttermilk (with some hot sauce added!) for an hour, take out roll in egg wash and then seasoned bread crumbs then either fry or roast in the oven. The buttermilk gives it a great flavor.
well i eat chicken a lot low fat diet no fat chicken is very good for you .dont fry it have it grilled as much as you like or poached ,mix it with rice and vegies .or with sauces low fat of course ,healthy heart
