Any creative recipes for chicken breast and potato chips?

I know it sounds crazy but i remember hearing somewhere that using chips as a breading is good on chicken breast. Has anyone heard the same thing or even another creative idea?Any creative recipes for chicken breast and potato chips?
Potato Chip Chicken


4 boneless skinless chicken breasts


2 cups crushed potato chips (Lays classic)


1/2 cup grated parmesan cheese (the only time I use it out of the green can)


1 tablespoon garlic powder


3 tablespoons butter or margarine





Preheat the oven to 400 degrees.


Mix the potato chips, cheese, and garlic powder in a large ziploc bag.


Melt the butter or margerine in a shallow dish.


You can cut the chicken breasts into strips if you want to do this as chicken fingers.


Moisten the chicken peices in the butter or margerine, then seal them in the ziploc bag, and shake to coat.


Lay the chicken out on a baking sheet (I always cover the sheet with foil for easy cleanup). If you want to, you can cover the chicken with the leftover coating.


Bake 40 minutes for whole breasts, 30 minutes for strips.








Potato Chip Chicken Casserole





INGREDIENTS


2 cups chopped, cooked chicken meat


1 cup cooked white rice


1 (10.75 ounce) can condensed cream of chicken soup


2/3 cup mayonnaise


2 tablespoons grated onion


1/2 cup chopped celery


1 (8 ounce) can sliced water chestnuts


1 tablespoon lemon juice


1/2 cup shredded sharp Cheddar cheese


2 cups crushed potato chips


1/4 cup water


salt and pepper to taste


DIRECTIONS


Preheat oven to 400 degrees F (200 degrees C).


In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper. Mix well. Spread this mixture into a lightly greased 9x13 inch baking dish. Cover with cheese, then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.Any creative recipes for chicken breast and potato chips?
Crush up the potatoe chips and use them like breadcrumbs. Mash the chips fine, coat the chicken in the chips and add the chicken to a heated pan with a little oil.

Yeppers, heard of it. For the best coating crush up the chips with seasoned bread crumbs. You can also use uncooked instant potatoes, corn flakes, rice krispies (all crushed, of course).
