What are some really simple recipes for chicken?

Okay I don't have alot of things to doll chicken up with just basics. All I want is something simple but tasty that isn't baked or fried chicken.What are some really simple recipes for chicken?
Balsamic Lemon Chicken





1/2 cup olive oil


1/4 cup lemon juice


2 Tbsp. balsamic vinegar


1 tsp. lemon zest


1 Tbsp. dry basil


2 cloves garlic, minced


1/2 tsp. salt


1/4 tsp. pepper


4 whole boneless chicken breasts, halved





Mix all ingredients and pour over chicken. Broil in 9x13” pyrex dish for 15 minutes each side. Lest rest 10 minutes, slice in strips.

BBQ CHICKEN (quick %26amp; easy)





2 chickens, cut up


1/4 cup butter


3 cloves of garlic, minced fine


1 large onion, chopped


1 cup ketchup


2 T. Worcestershire sauce


1/4 cup cider vinegar


1/4 cup sugar


1 tsp Creole seasoning, or salt


1/2 cup water


1/2 t. savory





Brown the chicken in your cast iron skillet in the butter.





Remove chicken and place in a baking pan/dish.





Add the garlic, onion, ketchup, worcestershire sauce, vinegar, sugar, seasoning, water and savory to the butter in the frying pan.





Mix well, then pour over the chicken.





Cover with foil and bake in 350ºF oven for about 1½ hours until done. Baste and turn several times during baking.

Caramelized Baked Chicken


Yield: 6 servings





3 pounds chicken pieces


2 Tbsp. olive oil


½ cup soy sauce


2 Tbsp. ketchup


1 cup honey


1 tsp. cayenne pepper


1 tsp Worcestershire sauce


1 clove garlic, minced


salt and pepper to taste





Preheat oven to 400º F. Place chicken in a greased 9”x13” baking dish. Mix together remaining ingredients. Pour over the chicken. Bake in a preheated oven for 45 minutes. Turn chicken over, baste, and bake 45 minutes more.

Crispy Chicken Cutlets





4 bonesless skinless chicken breast halves


1 egg white, whipped w/ fork


1/4 teas. salt


1/4 tsp. pepper


1/4 tsp. Tony Chachere's cajun seasoning


3/4 cup finely chopped pecans


3 Tbls. flour


1 Tblsp. butter


1 Tblsp. EVOO





Flatten the chicken pieces by putting between plastic wrap and pounding w/ mallet. Season both sides w/ salt, pepper, %26amp; Tony’s. In a shallow bowl, lightly beat egg white. In another shallow bowl, combine flour and pecans. Heat oil %26amp; butter in a skillet over medium heat. Dip the chicken first into the egg white wash, then into the pecan mixture to coat. Fry in the skillet 4-6 minutes for each side over medium heat. Serve immediately. (An electric skillet can be used for this dish, and keeps it warm after cooking.)





You can deglaze the pan w/ chicken broth, reduce, and finish w/ butter. You can also used condensed soup + ½ cup sour cream as a gravy.What are some really simple recipes for chicken?
Southwest Stuffed Potatoes





4-6 boneless, skinless chicken breasts


Figaro Liquid Fajita Seasoning


4 large baking potatoes


4-6 ounces light cheddar cheese, grated


green chili salsa





Wash and cube raw chicken breasts. Marinate in fajita seasoning. Bake potatoes 1 hour and 15 minutes at 400 degrees (adjust time for more or fewer potatoes). Spray PAM in a large skillet. Turn heat on high and pan fry chicken, turning often, about 15-20 minutes. Open potatoes, top with chicken, salsa and grated cheese.





Sour Cream Enchiladas





1 c sour cream


2 cans cream of chicken soup


1 can chopped green chilies


2 cups chopped cooked chicken


1 10-ounce package grated cheddar cheese


1 cup chopped onions


1 dozen flour tortillas





Blend together and set aside the sour cream, cream of chicken soup and green chilies. Dip tortillas in hot water, one at a time, to soften. Put a line of chicken, some of the onion, some cheese and a little soup mixture. Roll up and place in a shallow baking dish. Pour all remaining soup mixture on top. Sprinkle remaining cheddar cheese and onion on top and bake in 350 degree oven for 30-45 minutes, or until hot and cheese is melted.
1. 1 1/4 pounds boneless skinless chicken breasts, cut into 1-1/2 to 2-inch pieces


2. 1 (6 ounce) package SHAKE 'N BAKE Original Chicken Seasoned Coating Mix

2. Cooking Directions





1. Preheat oven to 400 degrees F. Moisten chicken pieces with water. Shake off excess water.


2. Shake 3 or 4 pieces at a time with coating mix. Discard any remaining coating mix. Place chicken pieces in 15x10x1-inch baking pan.


3. Bake 10 to 15 minutes or until chicken is cooked through. Serve with KRAFT or BULL'S-EYE Barbecue Sauce.

the simplest thing you can do to chicken is marinate it in italian dressing and grill or saute. i also like to marinate it in a drinkable yogurt with a ton of blended or finely chopped cilantro %26amp; garlic (for a couple days) and then bake it in the liquid on 350 or so. the yogurt tenderizes the meat and gives it a great taste. you can even use tropical flavored yogurt for extra flair.
I sear fry my chicken breast in a large deep frying pan, in butter! Then boil a box of pasta (I use bow tie, but anything will work) I add a can of sweet peas to the pan with the chicken and let cook on low for about 15 minutes, add the pasta, add 1/2 cup of butter and garlic salt and pepper to taste. stir together and walla you have a very simple chicken dish....Children love this, I have 6 and they devour it everytime I make it!

Boil the chicken with seasoning of your choice.





Open a pouch of Alfredo noodles. You know the ones that can be used as a side dish. Follow the recipe for the noodles but use the chicken broth you just created instead of plain water.





Chop chicken into bite size pieces and add to noodles midway through cooking process.

Marinated Grilled Chicken Breast


1 lb boneless chicken breast


8 oz golden italian dressing


3 oz H2O


mix dressing and H2O well pour 1/2 in casserole dish add chicken pour rest of dressing on top. Cover tightly refrigerate for an hour.


Grill it.
