Any inexpensive and delicious recipes for chicken to feed 30 people?

We're having an 80th b'day party for my Mom. The theme is ';cats in paradise';. I'm looking for ';luau'; themed recipes.Any inexpensive and delicious recipes for chicken to feed 30 people?
How about Chicken Kabobs? Cut up chicken breast and thread kabobs with pineapple, red onions and green peppers, baste with teriyaki marinade. You could do the same type of Kabob with pork and beef. Adding the veggies %26amp; fruit will help keep the cost down on the meat products. Luau's generally have lots of fresh fruit, pineapple, mangos, melons, etc.





Another option is serving pulled pork for sandwiches. here is a recipe that would work:





4 pound boneless pork shoulder


2 cups apple cider


1 can cola (not diet)


1/4 cup white vinegar


6 garlic cloves, coarsely chopped


2 jalapeno peppers, seeded %26amp; coarsely chopped


1 teaspoons liquid smoke


2 teaspoons kosher salt


2 teaspoons black pepper


2 large sweet onions, sliced thinly


2 tablespoons olive oil





鈥? remove pork shoulder from refrigerator and let rest while you prepared the sauce.





鈥? Place apple cider, vinegar, cola, garlic, jalapenos, 1 tsp salt %26amp; pepper, cumin, %26amp; chipotle chile powder in a blender, puree until smooth.





鈥? Preheat oven to 325 degrees. On the stove top, place a large dutch oven and turn heat to medium high. Add the olive oil. With remaining salt and pepper, season the pork. Sear pork on both sides, 2-3 minutes until lightly browned. Turn heat off, remove pork and slowly add 1/3 ot the pureed liquids, stirring to loosen brown bits from pan. Add half the sliced onions, Return pork to pan, add the remaining puree and onions. Cover and place in oven for 4 1/2 - 5 hours.





鈥? Remove from oven, let rest 10 minutes. Using 2 forks, shred the pork into the juices mixing with the onions. serve on buns with a sweet bbq sauce.

Here is a fantastic, one pot recipe for Chicken Biryani and a link to the Healthy Chicken Recipes site which it comes from. Simply get a huge pot (or several pots) and multiply the ingredients accordingly...





For two people, you will need:





1 large free range chicken breast fillet, cut in to 1';(2陆cm) cubes


1 small onion (finely chopped)


2 cloves of garlic (finely chopped)


5oz (125g) basmati rice


戮 pint (425ml) fresh chicken stock


陆 small cauliflower head (broken in to small florets)


Tbsp of frozen peas


陆 tsp powdered turmeric


陆 tsp powdered cumin


录 tsp chilli powder


录 tsp ground coriander seeds


1 3'; (7陆cm) cinnamon stick


2 small tomatoes (quartered)


6 slices of cucumber


1 tbsp of freshly chopped coriander, or cilantro as it's known in the USA


Sunflower oil


Salt





Mix the powdered spices in a glass bowl and add enough sunflower oil to make a thin paste. Add the chicken pieces and stir well, making sure all the chicken is coated. Cover with clingfilm and refrigerate for one hour.





Put the stock in a saucepan to heat and bring it up to a boil. Take a large pot and add a little sunflower oil. Sweat the onion and garlic in it for a couple of minutes then add the marinated chicken and stir it around until each piece is completely sealed and has turned opaque. Add the rice, the heated stock, cauliflower, peas and cinnamon stick. Season with salt to taste. Stir thoroughly, bring back to the boil, cover and simmer gently for ten to fifteen minutes or until the rice has absorbed all the stock, stirring occasionally.





Turn off the heat, remove and discard the cinnamon stick, add the coriander, tomato and cucumber and after a final thorough stir, the dish is ready to serve.
Huli Huli Chicken


Hawaii's own version of barbecued chicken is cooked with Huli-Huli Sauce (made with pure Hawaiian brown sugar cane along with soy sauce, fresh ginger and more).





Variation 1





Ingredients:





* 4-5 pounds of chicken pieces


* 1/3 cup ketchup


* 1/3 cup soy sauce


* 1/2 cup brown sugar


* 3 tablespoons sherry


* 1 piece ginger root, crushed


* 1 clove garlic, crushed





Preparation:





Combine ketchup, soy sauce, brown sugar, sherry, ginger root, and garlic. Stir well.





Place chicken, skin side up, on the rack of broiler pan about 6 inches from the heat or preferably on an outdoor grill.





Baste the chicken frequently and continue broiling or grilling for about 10 minutes on each side or until chicken appears done.





Variation 2





INGREDIENTS:





* 3 broken fryers, split or quartered


* 1/4 cup ketchup


* 1/4 cup shoyu (Japanese soy sauce)


* 1/2 cup chicken broth


* 1/3 cup white wine


* 1/4 cup frozen pineapple juice concentrate.


* pinch of fresh or dried ginger.


* drop or two of Worcestershire sauce.





PREPARATION:





Mix ingredients in bowl, brush over chicken pieces. Grill over barbecue, turning and basting with sauce until it is done (about 40 minutes).
Cola Chicken





1 family size package chicken wings


2 cup catsup


2 - 12oz. can cola (pepsi, coke, etc.)


2- packages McCormicks Buffalo wings seasoning





Put chicken in a non-stick pan.


Mix together catsup and cola, seasoning鈥?pour over chicken.


Bring to a boil.


Reduce heat鈥over with lid..and cook 45 minutes.


(turning chicken a few times, while cooking...to prevent from


sticking to pan)


Cook until the sauce becomes thick and adheres to the chicken.





It turns into the most incredible BBQ sauce. Yummmm!





I used the spices from a MILD (I don't care for ';HOT';) Buffalo


Wings packet...(the kind you get to bake in the oven).....I thought it


was really good.....(but you/I can't find a 'bad' way to fix chicken).





This recipe is doubled鈥?.for my husband and myself鈥 use 陆 the ingredients.





You can double鈥he double鈥?and more as you like.








BBQ Ribs





Use the same method (Cola Chicken)鈥?leave out McCormicks seasoning.

Here is a great recipe for honey chicken kabobs... my advice would be to substitute some of the veggies with grilled pineapples!
