Where can I find very tasty recipes for chicken breasts?

I tried cooks.com and allrecipes and they didn't seem to have what I want and chicken breast meat is very dry once cooked so I need some recipes that retain the moisture.Where can I find very tasty recipes for chicken breasts?
You probably need some sauce on it while you are cooking....here are a couple of ideas.....





chicken breast topped with cut up mushrooms, some dots of butter and wine poured over the top...then wrap very tightly with foil, or in a baking bag (with all the liquid, etc.) and bake until done....called ';silver chicken';...I served this to 100 people who loved it.





Also...old chicken favorite.....greased pan with rice and liquid in the bottom...chicken on top and cover with mushroom soup mixed with sour cream. When done you have delicious chicken and rice. Bake for awhile in the oven....can bake for quite awhile if you want it to.....serve the mushroom sauce over the rice with the chicken.(Judge the amount of sauce needed for the amount of rice you are making). Extra sauce can always be served with the dishes.





You can use soups, marmelade, italian sauce, barbeque sauce etc. when you bake the chicken...(one kind, not all at once).....will keep the chicken tender.Where can I find very tasty recipes for chicken breasts?

Garlic Chicken

INGREDIENTS


2 teaspoons crushed garlic


1/4 cup olive oil


1/4 cup dry bread crumbs


1/4 cup grated Parmesan cheese


4 skinless, boneless chicken breast halves





DIRECTIONS


Preheat oven to 425 degrees F (220 degrees C).


Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish.


Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear.
food network's web site or u can jerk the chicken or wrap in in bacon and place in oven at 300 till juices are clear and when u bake ur chicken make sure u rub them with oilive oil or butter that helps to retain the juices as well
Your chicken comes out dry because you cook it too long.....here is a recipe, they are good, I make it for hubby twice a week.....enjoy!!





INGREDIENTS:


6 boneless chicken breast halves


1 tablespoon vegetable oil


1 tablespoon butter


1 medium onion, sliced


4 ounces sliced mushrooms


1 rib celery, thinly sliced


1 egg, beaten


1 tablespoon chopped fresh parsley


2 tablespoons fine dry breadcrumbs


2 teaspoons grated parmesan cheese


3/4 cup shredded mozzarella cheese


salt and pepper


1 can (10 1/2 ounces) condensed tomato soup


1/2 cup water


1/2 teaspoon leaf basil, crumbled


PREPARATION:


Place chicken pieces between sheets of plastic wax; gently pound with a meat mallet to flatten evenly. Be careful not to tear or break through.


In a large skillet, heat vegetable oil and butter; saut茅 onion slices, mushrooms, and celery until tender.

open it up, butterfly cut, season them, and put red peppers, cheese and bacon, close them with a toothpick and bake them.
Easiest way to retain moisture is DO NOT OVER COOK IT.





Most people cook chicken for 45 min to an hour and it is WAY too long, it then comes out like sawdust.





Only cook it to 170 degrees and stop.. Should only take about 30 min or less depending on the piece and size.





Try the recipies without over cooking, I have never found a chicken recipie that my family didn't love.

Here's some ideas that i do, I marinate chicken in pineapple juice, its really good.. and I keep the pineapples and grill them with the chicken. You get the cans of pineapples that have the juice in it. And also marinate my chicken breast in italian dressing its really good!! Let me know how it goes!

CHICKEN IS AMAZINGLY TENDER, AND SUPER MOIST. IF YOU WANT TO ZEST IT UP A LITTLE, USE 3/4 CUP WATER, AND 1/4 CUP WHITE WINE INSTEAD OF MILK.
Lemme give u a very easy and delicious recipe made out of chicken breasts.


Seperate the bones, peel onions and grind them together.


then add salt according to taste, saffron powder and pepper powder.


then heat butter in a pan and spread this mixture. Allow to cook on one side then turn it the other side so as to get it cooked.

I dont remember where I heard this from but Iheard if you soak your chicken breast in salt water (just enough water to cover the chicken) and let it soak during the day before you cook it or over night it helps the chicken turn out really moist and juicy. Havent tried it yet though just found it a couple of days ago. Hope that helps.
