Anyone know any good recipes for chicken and dumplings?

I am having trouble finding a good recipe for chicken and dumplings. Any input would be greatly appreciated.Anyone know any good recipes for chicken and dumplings?
INGREDIENTS


1 (4 pound) whole chicken


3 cups water


3 cubes chicken bouillon


1 pinch poultry seasoning


1 pinch dried thyme


1 dash garlic powder


1 pinch dried sage


1/8 teaspoon salt


1/8 teaspoon ground black pepper


1 onion, chopped


1 1/2 cups chopped celery


1 cup chopped carrots


2 potatoes, cubed


1/4 cup chopped green bell pepper


1/4 cup chopped tomatoes


1 (10.75 ounce) can condensed chicken broth


2 tablespoons all-purpose flour


salt and pepper to taste


2 cups buttermilk baking mix


1/8 teaspoon chopped fresh parsley


1/4 teaspoon ground black pepper


1 cup milk











DIRECTIONS


In a large pot over medium high heat, combine the chicken, water, bouillon, poultry seasoning, thyme, garlic powder, sage and salt and pepper. Bring to a boil, reduce heat to low and allow to simmer. Add the onion, celery, carrots, potatoes, green bell pepper and tomatoes, cover pot and allow to simmer for one hour, or until vegetables are tender and chicken is done.


In a separate small bowl, combine the flour, buttermilk baking mix, parsley, ground black pepper and milk. Mix together well and form into little balls. Drop these balls into the simmering soup. Simmer for 5 more minutes.


Remove chicken, debone, take off skin, chop the chicken meat and return to pot. Heat through and serve.Anyone know any good recipes for chicken and dumplings?

Needless to say, I gave my wife a copy several years ago...but I think I use it more than her.
Classic Chicken and Dumplings Stew:





2 Tbs. vegetable oil


1 large onion, chopped


3 carrots, peeled and thinly sliced


4 ribs celery, coarsely chopped


6 cups chicken broth


陆 tsp. pepper


3 cups cooked chicken, coarsely chopped





In large, covered pot, heat oil over medium heat, add onions, carrots and celery. Cook and stir until carrots are tender. Add 6 cups broth and pepper, bring to a boil; reduce and simmer 15 minutes. Stir in cooked chicken.





Dumplings:


1 陆 cups self-rising flour


录 cup shortening


2 Tbs. fresh parsley


陆 cup chicken broth





In medium bowl, cut shortening into very small pieces to evenly distribute into dry ingredients until mixture resembles crumbs. Stir in parsley, add 陆 cup broth; stir just until dry ingredients are moistened. Drop by teaspoonfuls over simmering broth. Cover and cook over medium heat 10-15 minutes, or until dumplings are firm. Serves 6-8.














Chicken and Dumpling Casserole





陆 cup chopped onion


陆 cup chopped celery


2 garlic cloves, minced


录 cup butter or margarine


陆 cup all-purpose flour


2 tsp. sugar


1 tsp. salt


1 tsp. dried basil


陆 tsp. pepper


4 cups chicken broth


1 pkg. (10 oz) frozen green peas


4 cups cubed cooked chicken


2 cups buttermilk biscuit mix


2 tsp. dried basil


2/3 cup milk





In large pan, saut茅 onion, celery and garlic in butter until tender. Add flour, sugar, salt, basil, pepper and broth; bring to a boil. Cook and stir 1 minute; reduce heat. Add peas and cook for 5 minutes, stirring constantly. Stir in chicken. Pour into a greased 9 x 13 inch baking dish.





For dumplings, combine biscuit mix and basil in a bowl. Stir in milk with a fork until moistened. Drop by tablespoon onto casserole; (makes about 12 dumplings). Bake, uncovered at 350 for 30 minutes. Cover and bake 10 more minutes or until dumplings are done. 6-8 servings.
I make my chicken and dumplings the easy way and they are really good. First I boil my chicken breasts in a large pot. Take the chicken out and debone it. Cut it into bite sized pieces and put it back into the boiling water. Next I add a stick of butter, salt, pepper, and a little milk. Get that boiling again. Next take the really cheap canned biscuits and cut each one into 4ths. Drop the biscuit pieces into the boiling mixture and cook until they are done. You can tell because they go from being white to a deeper beige color. With this recipe if you find that all your dumplings are gone you can always go back and add more biscuits. Hope you like it. My whole family loves them.
