New chicken recipes?

I have boneless skinless chicken breasts, but I'm tired of cooking the same old thing. Anyone have any ideas for a chicken meal?New chicken recipes?

Cranberry Chicken


Came from a friend...It's sort of sweet but not quite. Goes back to ';cooking meat with fruit'; idea. Great taste , inexpensive and quick.


1 package onion soup mix


1 can cranberries (whole berry not jelly)


8 ounces Catalina dressing or Russian salad dressing


6 skinless chicken breast halves (legs and thighs)


4-6 servings





1. Mix first three ingredients.


2. Spray 9X9 baking pan with no-stick spray.


3. Place chicken in single layer in pan.


4. Pour cranberry mixture over chicken.


5. Bake at 350 degrees for one hour and serve.

Crispy Onion Chicken


I got this recipe from Taste Of Home magazine. It is so good, yet so easy! Kids love it! I crush the french-fried onions in a baggie to avoid the mess.


1/2 cup butter or margarine, melted


1 tablespoon worcestershire sauce


1 teaspoon ground mustard


1/2 teaspoon garlic salt or garlic powder


1/4 teaspoon pepper


4 boneless skinless chicken breast halves


1 (6 ounce) can cheddar French-fried onions or original French-fried onions, crushed


4 servings





1. In a shallow bowl, combine the butter, Worcestershire sauce, mustard, garlic salt and pepper.


2. Dip chicken in the butter mixture, then coat with onions.


3. Place in a greased 9-inch square baking pan.


4. Top with any remaining onions; drizzle with any remaining butter mixture.


5. Bake uncovered at 350 degrees for 30-35 minutes or until chicken juices run clear.New chicken recipes?
SO SO easy, and so so good. Place boneless, skinless chicken in a baking pan that has been sprayed with pam, season chicken with pepper, garlic etc (no salt, meal will be too salty). In a seperate bowl mix appx. 1 cup mayo with 3/4 cup fresh or canned parmesean cheese. spread mixtures over chicken, then spinkle chicken with fine bread crumbs. Bake for 25-30 min in a 425 oven. It is delicious!
Try this season chicken as alway stuff with ham and provonlone cheese then dust in flour,egg and bread crumb and fry serve with any sauce of your choice

Cut the chicken into bite size pieces, cook with olive oil, onions and garlic, salt and pepper.





Boil spaghetti noodles, drain, do not rinse





1 jar spaghetti sauce





all the cheese you want





1 9 inch 2 inch deep round pan





Mix all the ingreidients, add to pan and bake 30 to 40 minutes at 350, should be bubbly, and let sit for 10 and slice like pie

Arroz con Pollo (Chicken with Rice):





Chicken:


1/4 cup fresh lemon juice


1 teaspoon salt


1 teaspoon dried oregano


1/8 teaspoon Bijol seasoning


6 chicken drumsticks (about 1 1/2 pounds), skinned


6 chicken thighs (about 2 pounds), skinned


4 garlic cloves, minced





Rice:


2 cups uncooked Valencia rice or other short-grain rice


2 teaspoons olive oil, divided


2 1/2 cups fat-free, less-sodium chicken broth


3 tablespoons commercial sofrito (such as Goya)


1/2 teaspoon Bijol seasoning


1/2 teaspoon saffron threads (optional)


1/2 cup frozen petite green peas, thawed


1 (7-ounce) jar sliced pimiento, drained





To prepare the chicken, combine first 7 ingredients in a large zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning bag occasionally. Remove the chicken from the bag, reserving the marinade.





To prepare the rice, place rice in a colander in a large bowl, and rinse with cold water until the water runs clear. Drain rice well.





Heat 1 teaspoon olive oil in a large Dutch oven over medium-high heat. Add the drumsticks, and cook 5 minutes on each side or until browned. Remove from pan; keep warm. Repeat procedure with 1 teaspoon oil and thighs. Remove from pan; keep warm.





Add reserved marinade, rice, chicken broth, sofrito, Bijol, and saffron threads (if desired) to pan. Bring to a boil. Cover, reduce heat, and simmer 25 minutes. Stir in peas and pimiento; let stand, covered, 10 minutes.








Yield: 6 servings (serving size: 2 chicken pieces and about 2/3 cup rice mixture)

Here's one I've done and have received rave reviews. You can prepare the Chicken either in the oven or the saute pan. All you need is a couple of tablespoon of berry jam or preserves. Blackberry is the best but raspberry, blueberry or even a mixed berry will work just fine. Heat with about a tablespoon of water to thin it out. Slice your cooked chicken not all the way through just enough to form gap that will let the berry mixture in between the chicken. Now, just top with some grated cheese, Swiss is best but Cheddar or Jack are good too (even Blue Cheese crumbles if you have them are good). This simple sweet %26amp; cheesy chicken will sure to be a hit...at least it is in our family....

MEXICAN CHICKEN SALAD


2 boneless chicken breast, grilled, diced, chilled


1 avocado, ripe, peeled and diced


1/2 bunch cilantro, finely diced


1 large tomato diced


1/2 cabbage, sliced and diced


1/4 c diced celery


1/2 brown onion, diced


1 fresh jalapeno, seeds removed then diced


Mayo


salt/pepper to taste





In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.


Add the avocado and chicken, then 5 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold
Here's something easy and tasty...


Season the chicken breasts well with your favorite seasoning. I usually use chicken fajita seasoning, but you can use a combination of garlic, salt, lemon pepper and a little chili powder.


Cook a batch of angel hair pasta


Grill the chicken (or cook in a skillet). Cut into strips or cubes.


Toss the pasta with butter, olive oil, salt, pepper and parmesan cheese. Toss with the chicken, and add a little parmesan on top.


Voila! YUM! Serve with a side of garlic bread and a salad.
Chicken Stir Fry over Rice


(My brother and his friends go crazy over this dish)


Cut the chicken into cubes.


Dice some carrots, potatoes, celery, peppers, onions, mushrooms, broccoli etc.


In a large wok add half a cup of water with a table spoon of corn starch. Heat until corn starch is clear.


Add about half a cup of cooking wine or beer (the alcohol will evaporate) Boil the chicken in this stuff.


When chicken is cooked add the vegetables.


Add about half a cup of soy sauce.


Toss around with spatula


Add about 4 tablespoons of sugar.


Toss until potatoes are done


Serve over rice.





Chicken Ranch steak


Coat chicken with ranch dressing


Then coat it with dried bread crumbs


Fry in oil.
Have a killer white sauce chicken enchilada recipe:


%26gt;1/2 pound monterey jack cheese shred half-cube the other half


1/4 cup milk


1 can 98% fat free cream of chicken soup


c cans chopped green chilies


1 medium chopped onion separate into halves


diced jalepenos (optional)


chicken taco seasoning


chicken breasts


98% fat free flour tortillas





boil chicken breasts with taco seasoning for 30 min to and hour (until cooked completely) let chicken cool then shred and add 1 can chilis, half onion and jalepenos


at the last stages of boiling--in a sauce pan bring to a soft boil milk and soup and then add cubes of cheese --heat until all cheese is melted and 1 can chilis, half an onion and stir


now roll chicken mixture and shredded cheese into flour tortillas. place in a baking pan cover with cheese mixture and cook in a preheated 350 degree oven for 20 minutes.
