There are lots of things you can make with chicken besides soup. You can make:





Chicken Alfredo


Chicken Tacos


Tostada Salad with Chicken


Chicken in Cream sauce (Polo con Crema)


Chicken Waldorf salad


Sliced chicken sandwich


Chicken Salad (both the kind where you mix the chicken with nuts, mayonnaise, curry, black pepper, halved grapes, diced apple as well as the kind where you start with a bed of greens, add half a diced apple, a handful of cranraisins, shredded chicken, toasted pecans, toasted pine nuts, toasted sunflower seeds, some Feta cheese and top it with raspberry vinaigrette. Almost forgot the third kind of salad - the Chinese Chicken salad where you shred cabbage, add thin sliced green onions, the chicken, and then make a sweet/sour dressing with sesame oil, sesame seeds, vinegar and a little sugar.)





There is also Chicken Enchiladas - both in red sauce, green sauce and white sauce.





You can make Chicken Croquettes with a basic white sauce but thicker, dipped in egg and dipped in bread crumbs and then deep fried and served with a nice sauce over it.

COLA CHICKEN





4 skinless, boneless chicken breasts


%26gt; %26gt; 1 cup catsup


%26gt; %26gt; 1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan. Mix together catsup and cola, pour over chicken.


Bring to a boil. Cover, reduce heat and cook 45 minutes.


(turning chicken a few times, while cooking...to prevent from


sticking to pan)


Uncover, turn up the heat and continue to cook until the sauce becomes


thick and adheres to the chicken.


It turns into the most incredible BBQ sauce. Yummmm!





You can double the recipe and use more pieces of


chicken....wings...would be ideal...add some hot sauce....presto ';Hot


Wings';! Not tried this, yet.





I have used Ribs, just as good.





Fixed chicken wings, (using the above recipe) but...I


added the spices from a MILD (I don't care for ';HOT';) Buffalo


Wings packet...(the kind you get to bake in the oven).....I thought it


was really good.....(but you/I can't find a 'bad' way to fix chicken).





CRUNCHY ONION CHICKEN





1 1/3 cups French鈥檚 Original French Fried Onions


4 boneless skinless chicken breast halves


1 egg, beaten





LIGHTLY CRUSH:





Onions in a plastic bag.





DIP:


Chicken in egg





COVER:


With onion crumbs, press firmly to adhere to chicken.





BAKE:


Preheat oven to 400 degrees.


Place chicken on lightly greased baking pan.


Sprinkle with additional onion crumbs, if desired.


Bake for 20 minutes or until no longer pink in center.
Chicken Marsala





Ingredients





2 tsps. olive oil


1 medium onion, chopped


1-1/2 lbs. boneless skinless chicken breast halves, pounded to 1/4 inch thickness


1 cup dry Marsala wine


3/4 cup chicken stock, low-fat, low-sodium


1 Tbsp. cornstarch, or arrowroot powder


salt and pepper, to taste





Instructions





In a large skillet over medium-high heat, heat the oil. Add the onion and saut茅 for 5 minutes. Add the chicken and cook on each side for 5 minutes. Add the wine and cook for about 4 minutes until the wine looks syrupy. In a small cup, dissolve the cornstarch or arrowroot powder in the stock. Add to the chicken and cook until the sauce is thickened, about 2 minutes. Add salt and pepper to taste.








Garlicky Chicken Breasts





1 envelope Good Seasons Italian Salad Dressing


陆 cup grated Parmesan Cheese


Mix these together





Moisten 6 skinless boneless chicken breasts with water, dip into mixture, place in shallow baking dish. Bake 400 degrees for 20 - 25 minutes or until cooked through.








Lazy Gourmet Chicken





1 tbls sugar


录 cup vinegar


陆 cup soy sauce


4 garlic cloves, minced


戮 tsp salt


1 tsp pepper


2 陆 - 3 # fryer, cut up





Combine all ingredients except chicken in a large, tightly lidded saucepan and bring to a boil. Add chicken pieces and coat each well. Keep covered and reduce heat, simmer 35-40 minutes, basting several times along the way.
Here's a really tasty baked chicken with Thai peanut sauce recipe...you'll need the following ingredients to make it:





4 chicken breasts (if they're big cut them in half, otherwise they'll take longer to cook)


1 cup of creamy peanut butter


3/4 cup of orange juice


2 tablespoons of hot sauce


Salt, pepper and oregano (amount to your liking.)











Preheat oven to 350 degrees. For moist, juicy chicken cover with aluminum foil and bake for 1 hour.





Once the chicken is baked, you can start the Thai peanut sauce...





Melt peanut butter completely. (Microwaving it is the best way.)





Then you'll need to pour the melted peanut butter through a small strainer into a medium saucepan.


If you need to, take a spoon and press down any lumps there may be.


(Doing this separates the crumminess of the peanut butter leaving you with a smooth thin peanut butter sauce.)





Mix in the orange juice and hot sauce and stir it well.





Mix in salt, pepper and oregano and heat on stove top on medium heat stirring constantly until it comes to a simmer.





Remove from heat and pour over chicken and dig in!





Serves about 4 people.
