Grilled Chicken with Peppers and Artichokes

This elegant chicken dish with artichoke hearts, bell peppers and green onion is surprisingly easy to prepare.

1 jar (6 ounces) marinated artichoke hearts

1/3 cup dry white wine or chicken broth

4 boneless skinless chicken breast halves (1 pound)

2 medium bell peppers, cut lengthwise into fourths

4 medium green onions, sliced (1/4 cup)

1/4 teaspoon pepper

1. Drain marinade from artichoke hearts; cover and refrigerate artichokes. Mix marinade and wine in shallow glass or plastic dish. Add chicken and bell pepper, turning to coat with marinade. Cover and refrigerate, turning occasionally, at least 30 minutes but no longer than 24 hours.

2. Heat coals or gas grill for direct heat.

3. Remove chicken and peppers from marinade; reserve marinade. Cover and grill chicken 4 to 6 inches from medium heat 5 minutes. Turn chicken; add peppers to grill. Cover and grill 10 to 15 minutes longer or until peppers are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.

4. Strain marinade. Heat marinade, artichoke hearts, onions and pepper to boiling; boil and stir 1 minute. Serve artichoke sauce with chicken and peppers.
personally i like chicken fried in olive oil, gently with onion, add double cream little milk to taste then add mushrooms how ever many you choose serve with unrefined basmati rice and salad.
Take a thin chicken cutlet, put a thin piece of ham and a thin piece of cheese on top. Roll it up and dip in egg batter, then roll in bread crumbs. Cook in oven 20 min. When done top with chicken gravy from a jar. Fast version of Chicken Corden Bleu (don't know if I spelled that right)
mmm yeah...

wisk a couple of eggs in a bowl, in a seperate bowl mix bread crumbs and ramano cheese. dip the chicken in the egg, then in the bread crumbs. put another layer of egg, and cover with another layer of bread crumbs. then bake at 350degrees until done...very simple, but very good.
ROLL YOUR CHICKEN IN SHAKE N BAKE AND BAKE IT FOR ABOUT 45 MINUTES OR SO IT COMES IN 2 OR 3 VARIETIES...MY SON IS PICKY BUT HE'LL EAT THIS....
Yes. I just made it tonight.

Take the zest and juice of two limes in a bowl and mix with chopped garlic and grated ginger root (to taste). I happen to like garlic a lot so I used 4 cloves. Whisk together with vegetable oil. Let chicken set in mixture for at least 15 minutes and up to an hour. Cook on outside grill or inside grill pan and enjoy. It really is very good and good for you.
This is a great recipe I saw on Paula Dean's show on Food Network. It is for Chicken nuggets and Honey Mustard sauce. It was on an episode called 'Poker Night'. I have tried it a couple of times and it always goes over great! So easy and great for kids as well as adults.
