Chicken recipes?

does anyone have any healthy chicken recipes? my family is very picky and getting both kids to eat all their food is tricky.Chicken recipes?
Atkins Chicken


you need


Chicken breast or any chicken you like


1Tablespoon of melted, I Can't believe it's not butter/or whatever butter you like to use


Italian seasoning





In a lightly greased dish place your chicken then spread melted butter over chicken, sprinkle with Italian seasoning and put in oven for 350 hour and half very yummy you will know when it is almost done because it smells great. My niece and nephew love it and they are only 2Chicken recipes?
************************Cherry Cola Chicken





INGREDIENTS


2 cups hickory smoke flavored barbeque sauce


1 (2 liter) bottle cherry cola


1 cup grape jelly


1 (4 pound) whole chicken, cut into 6 pieces





DIRECTIONS


In a Dutch oven, large enough to hold your chicken, combine the barbeque sauce, 1 liter of cola and grape jelly. Add the chicken and pour in more cola if needed to cover it. Bring to a boil, then simmer over medium-low heat for 1 hour, adding more cola as needed to keep the chicken covered.


Preheat a grill for medium heat. Remove the chicken from the sauce, and place on the grill.


Cook, turning frequently for about 20 minutes, just until the skin is crispy. Heat the leftover sauce over high heat and boil for about 10 minutes to serve alongside the chicken.

Shake-n-Bake is always a good bet (use skinless chicken breast - just as good!) To change it up, I like to add my own blends of herbs and spices to the bag - like rosemary, lemon pepper, or even steak rub.





To make it even more fun, cut the breasts into strips or nuggets before coating them.
My favorite is Bruschetta Chicken!





Preheat Oven to 350





Take some boneless, skinless chicken breasts and place them in a casserole dish.





Cover with Bruschetta (my favorite is from Trader Joe's. It comes in a jar)





Sprinkle some mozerella on top





Bake for about 25 minutes.

Honey-Teriyaki Chicken





1/2 c. teriyaki sauce


3 tbs honey


1 tbs vegetable oil


2-3 cloves of garlic, chopped


2 green onions, sliced


2 tsp freshly ground ginger





This is enough marinade for 4-6 boneless, skinless chicken breasts or 6-8 thighs. Marninate 1-4 hours. Grill or broil.





Pineapple Stuffed Chicken Breasts





4 boneless/skinless chicken breasts, butterflied


salt %26amp; pepper, to taste


5 oz package yellow rice mix


8 oz can crushed pineapple in juice


1 c. french cut green beans


1 tbs corn starch


2 tbs soy sauce


1 tsp ground ginger





Drain pineapple-RESERVE THE JUICE. Cook yellow rice according to package directions, mix in pineapple %26amp; green beans.





Preheat oven to 400 degrees. Line a rimmed cookie sheet with foil (spray with cooking spray) or parchment. Make 4 mounds of rice on cookie sheet. Lay chicken over rice, season with s%26amp;p. Bake for 15 minutes or until chicken is 160 degrees (yes-this is underdone-we're not done cooking yet).





Meanwhile, bring pineapple juice %26amp; soy sauce to a boil. Mix corn starch %26amp; ginger with 1/4 c. water. Add to juice %26amp; cook until thickened. Pour glaze over chicken %26amp; cook 5-8 more minutes or until glaze is set %26amp; chicken is cooked thru.





Lightly season 1/2 c. flour with salt, pepper, garlic powder. Dredge 4-6 boneless, skinless chicken breasts in flour. Saute in 2 tbs olive oil %26amp; 1 tbs butter until browned on both sides (4-6 minutes per side). Remove chicken, pour in 1 c. chicken broth, 4 tsp lemon juice %26amp; bring to a boil until reduced by 1/3. Lower heat %26amp; return chicken %26amp; 1 tbs fresh chopped parsley to the pan. Turn chicken over to coat with sauce %26amp; cook 2-3 more minutes or until chicken is cooked thru. Season to taste with additional s%26amp;p.
get some boneless chicken breast and bake them in the oven and when there almost done pour a can of cream of chicken or mushroom soup over it and bake it until the chicken it done.
My family LOVES this one - and it is so quick : )


My OH will even scrape the darkened bits from the bottom of the pan and eat them after dinner.

Oven-fried Chicken





1 egg


1T water


-----Mix together in bowl





1-1/2 C Hungry Jacks potato flakes


1 t seasoned salt


1/2 t paprika


1/4 t garlic powder


3 T oil


-----Mix together in large bowl





3 lbs. cut up chicken pieces (I use Pick of the Chix)





Dip each piece in the egg mixture, then coat all sides with potato flake mix.





Place skin side up in 13x9 pan. Pour/pat any extra flake mix over the chicken.





Bake 400潞, 1 hr or till tender.
Very simple and delicous.





Chicken Thighs (skinless bonless)


Ginger


Lemon


Butter


dash of garlic or watercress (if u want a diff type taste use wat)





Mix ingredients together in a pan


Cook chicken in sauce.





To Plate. Chicken thigh, cover in sauce garnish with Lemon piece and watercress or Just Lemon piece
Many chicken recipes are healthy.... there are thousands, I'm sure. Here's one I like that's healthy... and super simple. It's not gourmet, but it's sure good. No seasoning is necessary because it's all in the salsa.





boneless chicken breast pieces


jar of mild salsa


zucchini


onions (thinly sliced)


green peppers (thin strips)


lite Mexican blend cheese





Place boneless chicken breasts in a baking dish. Cut up zucchini in slices then quarters. Thinly slice some green peppers and onions. Put all that on top of the chicken. Then pour a jar of your favorite salsa over that and bake at 350 deg. until done (about 45 mins. to an hour... depending on how much chicken you're cooking). About 5-10 minutes before you take it out of the oven, sprinkle on the cheese. When it's all melted, it's ready to serve. Have a salad with that and you have a meal.





(Shake %26amp; bake is tasty.. but not so healthy)
put boneless@skinless chicken breast in the crock pot @cover with zesty Italian dressing(you can get fat free) put on low in the morning.So good @ tender with LOTS of flavor!
