QUICK %26amp; EASY CHICKEN POT PIE

Serves family of 4 serving each. This recipe is very hearty and filling. Usually one serving is enough for each person, but you can use 1 more can of biscuits and larger cans of veggies for more servings or leftovers. Preheat oven to canned biscuits recommendation.

1 stick melted butter

1/3 cup all purpose flour

1 tsp chopped onion flakes

1 can chicken broth

2/3 cup milk

1 large can chicken breast

1 single serving size can green peas

1 single serving size carrots

1 can peeled, sliced potatoes

Over medium heat, brown flour and onion flakes in melted butter.

Stir in broth and milk.

Add chicken and vegetables, stirring until well blended.

Salt and pepper to taste.

Lightly grease baking dish. Press 陆 can of the biscuits out to be a little flatter, so they won't rise a lot and will be ';crust-like';. Place the pressed biscuits on bottom of dish. Pour chicken mixture over biscuits. Top with remaining biscuits.

Chicken Fingers

Yield: 4-6 Servings

2 whole chicken breasts, skinned and boned

1 large egg, beaten

2 Tablespoons warm water

3 Tablespoons vegetable oil

Onion salt to taste

Salt and freshly ground pepper to taste

Fresh bread crumbs (perfect when made from last week's leftover Sabbath challah)

Method:

1. Cut the chicken breasts into 3-inch strips.

2. Mix the egg, warm water, oil, onion salt, and salt and pepper in a wide soup bowl.

3. Place the bread crumbs in a second bowl.

4. Dip the chicken strips into the egg mixture and then the bread crumbs so they are evenly coated. Refrigerate a few hours.

5. Bake in a preheated 350掳 oven for 30 minutes or until golden or fry in a slight amount of additional oil or margarine until golden on each side.

Chicken Quesadillas

1 each skinless, boneless chicken breast, cooked and cooled

4 each 6-inch, store-bought flour tortillas

1 Tablespoon grapeseed oil

1 each ripe, medium tomato, seeded and chopped

1 loose Tablespoon cilantro finely chopped (see tips*)

1/2 cup finely shredded cheddar cheese

1/2 cup finely shredded, mild white cheese (like Monterey Jack)

Method:

Cut or pull the chicken breasts into small pieces. Heat a medium saut茅 pan over a medium- high heat. Brush both sides of each tortilla very lightly with the oil. Cook each tortilla on both sides until they crisp lightly. Don't be alarmed when they puff-up.

Lightly pat them and they will deflate (this is fun for the kids to watch). Lay two of the tortillas side-by-side on a cookie sheet or baking pan large enough to accommodate them both without overlapping. Spread the cheddar cheese evenly over each tortilla. Add the chicken then sprinkle with cilantro. Add the tomatoes, then the white cheese. Top with the remaining tortillas. Bake in a pre-heated 400掳 oven, turning once with a large metal spatula, for eight to ten minutes. Remove the pan from the oven and press each quesadilla firmly. This will make them easy to cut and prevent the filling from escaping. Cut into one- sixth wedges and take a trip south of the border!

I don't know how you feel about breaded chicken, but Tyson makes chicken tenders in bags in the freezer section. What I've done is baked the chicken in the oven, boiled some penne pasta while the chicken is baking, and when the pasta and chicken are done, cut the chicken into bite-sized pieces, layer the chicken over the pasta, pour a jar of your favorite spaghetti sauce over the chicken and pasta and sprinkle mozzerella cheese over this. Put it back in the oven just until the cheese is melted and you have a lovely, easy chicken parmesan casserole that the whole family can enjoy with some carrot sticks or some broccoli. I hope this helps!
