Artichoke Chicken Recipe


Preparation time: 10-15 minutes. Serves 2





Ingredients:


2 six ounce boneless, skinless chicken breasts


4 tablespoons olive oil


1/2 teaspoon salt


1/4 teaspoon white pepper


1/4 teaspoon garlic powder


1/4 cup fresh sliced mushrooms


1/4 cup julienne red onions


2 teaspoon minced garlic (like garlic? add another teaspoon - cut one teaspoon if you like only a little garlic)


1 tablespoon dried basil


2 ounces dry sherry


8 halves of marinated artichoke hearts


flour





Instructions:


Heat olive oil in a saut茅 pan until hot


Add mushrooms, red onion, salt, pepper and garlic powder and saut茅


Push mushrooms and onions to one side of the pan and add floured chicken breasts with a little extra flour


Cook and turn chicken until lightly browned


Add garlic, basil, artichoke hearts and sherry to deglaze the pan (use a little more sherry if necessary)


Cook and reduce the sauce to thicken


Plate the chicken breasts and pour half the remaining ingredients and sauce over each breast

Chicken Kiev, sometimes also called Chicken Supreme, is a rich, classic recipe of boneless chicken breast pounded and rolled around seasoned butter, breaded and fried.





Chicken Kiev


Preparation time: 45 minutes. Serves 4





Ingredients:


8 ounce butter, softened


1 teaspoon lemon juice


1/2 teaspoon finely minced garlic


1 teaspoon dried tarragon


1 teaspoon dried parsley


3/4 teaspoon Kosher salt


1/4 teaspoon black pepper





4 six ounce boneless, skinless chicken breasts


Salt and pepper


2 egg yolks + 1 1/2 teaspoons water


Flour


2 cups Japanese bread crumbs (Panko) or dry bread crumbs + 1/4 cup more for filling


Vegetable oil for frying





Instructions:


Combine butter, lemon juice, minced garlic, tarragon, parsley, salt and pepper in the bowl of a stand mixer or in a food processor.


Place the mixture on plastic wrap or wax paper and roll into a small log and chill it in the freezer


Place the chicken breasts between two pieces of plastic wrap and pound them to 1/8 inch thickness and season them with salt


Place 1/4 of the chilled butter on the wide end of each breast and sprinkle with 1 tablespoon of bread crumbs


Roll up each chicken breast around the butter and crumb mixture tucking in the sides as you go; chill the breasts


Combine the egg yolks and water in a pie pan; place 2 cups of bread crumbs in another pie pan; and place flour in a third pie pan


Heat a large skillet with 1/2 inch of vegetable oil over medium-high heat (about 375 degrees F)


Roll each chicken breast in the flour and shake off the excess; brush each breast with egg yolk and then roll each breast in the bread crumbs making sure there are no exposed surfaces (dip the ends of the rolled breasts a second time for extra coverage)


Brown the chicken breasts in the heated oil in the skillet sealed side down and then cook on all sides until golden brown (about 4-5 minutes on each side or until heated through - about 165 degrees F)


Set the chicken breasts on a cooling rack placed on top of a sheet pan or large plate to drain

try dressing or rice with a lil butter.
srpay a 13x 9 baking dish with pam than add your chicken breast add one can of cream of chicken soup on top and than put two boxes of stuffing on top make sure you mix the water with the stuffing first before placing onto of chicken and soup! Bake at 350 for 30 min or until chicken is done and stuffing is lightly brown on top!

Crispy Parmesan Chicken Breasts


1. 1/3 cup KRAFT 100% Grated Parmesan Cheese


2. 1/4 cup seasoned dry bread crumbs


3. 1/4 teaspoon paprika


4. 1/4 teaspoon salt


5. 1/4 teaspoon black pepper


6. 6 boneless, skinless chicken breast halves


7. 3 tablespoons butter or margarine melted





鈥?Pre-heat oven to 400 Degrees, Mix cheese, crumbs and seasonings in a shallow dish


鈥?Dip chicken in butter, coat with cheese mixture, place in a shallow baking pan


鈥?Bake 20 minutes or until chicken is cooked through





Yield: 6 servings

Chicken Fajitas





2 tablespoons canola oil


3 boneless chicken breast halves, cut in thin strips


1 medium onion, cut in wedges


4 mild green or red chile peppers, seeded and sliced


1 sweet red bell pepper, seeded and cut in strips


1 green bell pepper, seeded/cut in strips


8 flour tortilla, warmed


1 bunch green onions, trimmed, sliced





PREPARATION:


Heat the oil in a heavy skillet; cook the chicken strips over high heat, stirring constantly, for 5 minutes, or until cooked. Drain and serve.


Add the onion, garlic and chile peppers to the oil in the pan and saut茅 over high heat for 2 minutes.

Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.


Pasta.


Place in salted boiling water and cook until you get the degree of cooking you like.


Penne or Elbows will do very well here.


Sauce.


Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.





Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.
