Chicken and Broccoli Cheese Casserole Recipe

Although the recipe calls for frozen broccoli, I usually use fresh. Either way it is so good, I think even broccoli haters will love this one. It's a great easy mid week dinner recipe but a wonderful recipe for entertaining too.

2 10 oz packages frozen chopped broccoli (or lightly steam an equal amount of fresh)

4 or 5 boneless chicken breasts

2 cans condensed cream soup (see tips)

1 cup mayonnaise

1 tbsp lemon juice

1/2 tsp curry powder

1 cup grated sharp cheddar cheese

1/2 cup bread crumbs

1 tbsp melted butter

Cut chicken into large chunks and cook (microwave or boil just until cooked through). Arrange frozen broccoli evenly in bottom of 13';x9'; casserole dish. (If you are using fresh broccoli, steam or boil lightly, until just underdone). Arrange cooked chicken over broccoli.

Mix together - undiluted soup, mayonnaise, lemon juice, curry powder. Pour over chicken. Sprinkle with grated cheese. Top with bread crumbs tossed in melted butter.

Bake uncovered at 350掳 for 30 minutes or until cheese is melted and sauce mixture is bubbling around the edges.

Kentucky Fried Chicken Recipe

KFC chicken isn't something any of us is going to eat every day, but when you want that down home fried chicken experience, it sure does hit the spot!

Our recipe for Kentucky fried chicken is very easy to make, either in a regular skillet or deep fryer. It is actually perfect for a deep fryer. Just make sure to cook the chicken right through.

1 whole chicken, cut into pieces

2 to 3 eggs, beaten

3 to 4 tablespoons oil for frying

Coating Mixture:

2 cups flour

4 teaspoons paprika

2 1/2 teaspoons salt

1/2 to 1 teaspoon pepper

1 teaspoon poultry seasoning

1 teaspoon thyme

1 teaspoon oregano

1 teaspoon tarragon

1/2 teaspoon garlic salt

1/2 teaspoon onion salt

1/2 teaspoon celery salt

Mix together all the coating ingredients and place in a clean plastic bag. Dip each piece into beaten egg, then into the flour mixture in the bag. Coat the chicken completely with the flour mixture.

Place the oil in a skillet and heat. Brown the chicken in oil slowly (225潞F if you are using an electric skillet), uncovered. Cover the skillet and continue to fry at a very low heat until the chicken is fully cooked, approximately 1 hour.

Drain well on paper towels.

Chicken Cacciatore Recipe

1/2 teaspoon of celery seed

Serve over spaghetti.

Now how easy is that?

Beer Can Chicken Recipe

Chicken and beer may sound like an odd combination but because the chicken sits on top of the beer can, the moisture from the beer below makes the chicken moist and succulent every time. Grill it or bake it, make it plain or use your favorite rub (one of my favorites is below). Either way, once you try it, beer can chicken will be on your list of favorite recipes too.

1 whole chicken (about 4 pounds)

2 tablespoons vegetable oil

2 tablespoons salt

1 teaspoon black pepper

3 tablespoons of your favorite dry spice rub

1 can beer

For the rub:

1 teaspoon dry mustard

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon granulated garlic

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/4 teaspoon freshly ground black pepper

To make the rub:

In a small bowl combine the rub ingredients.

Chicken:

Remove the neck and giblets from chicken and discard them. Rinse the chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and the dry rub mix. Set aside.

Open beer can and empty out half of the beer. Place the beer can on a solid surface. Grabbing a chicken leg in each hand, place the bird cavity over the beer can. Straighten it out so it is solidly in place.

Grilling Directions:

Heat your grill to medium high heat.

Transfer the bird-on-a-can to your grill and place in the center of one of the grates, balancing the bird on its 2 legs and the can like a tripod. Turn off the burner that the chicken is sitting over, so it gets only indirect heat. If using coals, place the bird in an area without coals directly below it.

Cook the chicken over medium-high, indirect heat, with the grill cover on, for approximately 1 1/4 hours or until the internal temperature registers 165潞F in the breast area and 180潞F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife.

Remove the chicken from the grill very carefully, wearing barbecue gloves and it let rest for 10 minutes before carving. Be careful that you don't spill the beer - it's hot!

Note: Always discard the beer as it may contain bacteria from the chicken.

Oven Baking Directions:

Preheat the oven to 375掳F.

Carefully place the bird and beer can on a baking pan or roaster that is deep enough to catch all of the juices. Bake chicken for approximately 1 1/2 hours or until juices run clear as indicated above.

Makes 4 to 6 servings.

Everyone seems to love a great chicken wing recipe and this one is particularly tasty. These sticky chicken wings are great for an easy fun family dinner, but they are terrific for entertaining too. A great appetizer party recipe that the crowd will love.

Buy the chicken wings whole and separate them yourself, or, for a really easy dinner recipe, buy them already cut at the joint into individual serving pieces. Either way, get ready for a treat!

Mix all sauce ingredients well and pour over chicken wings. Bake for 20 minutes without a cover, then for 20 minutes covered, then a final 20 minutes uncovered.
lemon chicken just put a piece of chicken in some tin foil with a table spoon of water and slice a lemon on the top and a bit parsley
depending on what kind of chicken you have , boneless or whole, you can do so much with both kinds. first if a whole chicken you clean it take the neck and hearts out , throw away. place in a roasting pan put some seasoning inside the hole of the chicken - things like parsley. black pepper garlic. onion powder or even a real one will do. you can add an orange. a lemon inside . or even theym . . than poke a hole near the legs and let air in and place some oil on top of the skin and bake depending on size of chicken. if you want. you can not put the seasoning inside and put stuffing inside the hole of the chicken instead.. if you can a breast- cut up and make chicken and rice.

Chicken breast with skin

olive oil, salt, pepper and garlic powder

Potatoes cut lengthwise

Spray an oblong baking dish with Pam. Put cut potatoes in dish. Pour oil over (enough to cover the potatoes) salt, pepper and lots of garlic powder. Put chicken on top of potatoes and then oil again, salt, pepper and garlic powder. Cover with foil. Bake at 375-400 for about 45-50 mins. Take cover off and bake until skin on chicken gets crispy. It is important to use chicken with skin on it because it real adds flavor. You can always remove skin before eating. Serve with a vegetable or salad. This meal makes your house smell fantastic. Enjoy.
