What are some good chicken recipes for people living on a budget?

Chicken ala King





Saute until tender but not brown:


1/4 cup butter


1/3 cup chopped onion





Blend in:


1/3 cup flour


1/2 tsp. salt





Add and stir until thick:


1 cup chicken broth


1 cup milk


2 cups cooked chicken, bite sized pieces


1 small can mushrooms, drained





Stir in until melted:


3/4 cup grated Monterrey Jack cheese





Serve over flaky biscuits, toast, or in pastry shells.

Arroz con Pollo





Boil seasoned chicken in water until done. Reserve 2 and 1/3 cups of the broth.





In 2-3 T. of hot oil, over medium heat, brown 1 cup rice. At the last of the browning, add chopped onion, minced garlic, and chopped green pepper. Finish browning until rice grains are golden toasted color then add the reserved chicken broth. Add diced chicken, small can of mushrooms (optional), salt and pepper.





Cover tightly and simmer about 30 minutes until rice is done. Stir lightly and add a sprinkling of cooked green peas and sliced olives if you have some. Add more liquid if needed. Cover, remove from heat, and let sit for 10-15 minutes.What are some good chicken recipes for people living on a budget?
You can use any pieces of chicken you want. Also I add a package of frozen carrots and peas.





Crock Pot Chicken and Dumplings





4 skinless, boneless chicken breast halves


2 tablespoons butter


2 cans (10.75 ounce size) condensed cream of chicken soup


1 onion, finely diced


2 cups biscuit mix (bisquick or jiffy mix)


2/3 cup milk


directions:


Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover. Cover, and cook for 5 to 6 hours on High.





About 30 minutes before serving, drop biscuit mixture by spoonfuls on top of chicken mixture and let cook for another 30-40 minutes.What are some good chicken recipes for people living on a budget?
Grilled or baked chicken that's been marinated (you can purchase canisters of marinade spices, packets of marinade spices for about $1ea or less and mix it with olive oil and vinegar, or splurge for the already mixed marinade when it's on sale).

There are a ton of ways,,,roast chicken is an easy one and the leftovers can be made into sandwiches or into chicken salad....pieces can also be cut up and used in stir fry..there is also alot of crock pot recipes that call for chicken..for lots more, try this web site..

Make cajun chicken... Here is the spice recipe... Just sprinkle on chicken and fry in a small amount of oil until done.





Cajun seasoning mix...


2 TBL. salt


2 tsp. cayenne pepper


1 tsp each, garlic powder, onion powder, paprika, white pepper, and black pepper





Mix together and sprinkle on chicken or veggies. It's great on french fries! Just be careful. I always put too much on and it burns my mouth. But I still eat it, I just suffer.
There's one that campbells soup make called cheesy chicken and veggies or something. It's basically white rice, cream of chicken soup, frozen bag veggies, some spices, chicken, and cheese. Very good!
