I鈥檓 cooking tonight, any quick and easy chicken recipes?

Something tasty which takes no longer than 40 mins to do. Remember I'm from the UK, so remember the metric system! :) thank you all

2 chicken breasts roasted in the oven, roast till juices run clear when you stab the chicken with a skewer.





Oven some chunky wedges as per packet.





Once roasted wrap the breast is streaky smoky bacon and place back in the oven till bacon is cooked.





Melt a good lump of stilon cheese, if yiou are not a fan of blue cheese use a cheese you like.





Once cheese melted, add a small pot of double cream and season.





Serve chicken with wedges and drizzle with cheesy cream sauce. Maybe throw in some onion rings?

My favourite chicken recipe is bacon wrapped chicken breast. Chop some garlic an thyme and mix with olive oil, spread over the chicken breast then wrap with bacon. Roast in the oven for about 30 mins, serve with roast potatoes and veg or rice or pasta.

8 rashers streaky bacon , chopped into large pieces


4 chicken breasts , cut into large chunks


200g pack baby button mushrooms


1 tbsp plain flour


400g tin chopped tomatoes with garlic


1 beef stock cube


dash Worcestershire sauce


handful of parsley , chopped





Heat a shallow saucepan and sizzle the bacon for about 2 mins until starting to brown. Throw in the chicken, then fry for 3-4 mins until it has changed colour. Turn up the heat and throw in the mushrooms. Cook for a few mins, stir in the flour, then cook until a paste forms.


Tip in the tomatoes, stir, then crumble in the stock cube. Bubble everything for 10 mins, splash in the Worcestershire sauce, stir through the parsley, then serve with mash or boiled rice.


Make it with beef


Adding beef stock to a chicken recipe will give the dish a big meaty flavour.

12 ounces chicken tenderloin strips


1/4 teaspoon salt


1/4 teaspoon ground red pepper


1 teaspoon cooking oil


1 medium sweet potato peeled halved lengthwise and thinly sliced


1 small banana pepper seeded and chopped


3/4 cup unsweetened pineapple juice


1 teaspoon cornstarch


2 unripe bananas quartered lengthwise and cut into 3/4-inch pieces


2 cups hot cooked quick cooking brown rice





Directions


Season chicken with salt and red pepper.


In a large nonstick skillet cook chicken in hot oil for 4 minutes.


Add sweet potato and banana pepper then cook and stir 6 minutes longer.


In a small bowl stir together the pineapple juice and cornstarch then stir into chicken mixture.


Cook and stir gently until slightly thickened and bubbly then stir in bananas and cook and stir 2 minutes more.


Serve over rice.
Do chicken cuts in a pot roast.


I did that last night.


I have a cast iron pot with a lid, and in it I pot roasted some chicken cutlets and whole baby onions and potato halves.


Came out beautifully, and with no real addittion of spices or herbs.


Just a pinch of salt and a small sprinke of pepper.


Served on a bed of rice, it was a meal fit for a king.

COLA CHICKEN


(This is my favorite way of fixing chicken wings鈥︹€nd ribs.)





4 skinless, boneless chicken breasts


1 cup catsup


1 12oz. can cola (pepsi, coke, etc.)





Put chicken in a non-stick pan. Mix together catsup and cola, pour over chicken.


Bring to a boil. Cover, reduce heat and cook


(turning chicken a few times, while cooking...to prevent from sticking to pan) until the sauce becomes thick and adheres to the chicken.


It turns into the most incredible BBQ sauce. Yummmm!





You can double the recipe and use more pieces of


chicken....wings...would be ideal...add some hot sauce....presto ';Hot


Wings';! Not tried this, yet.





I have used Ribs, just as good.





Fixed chicken wings, (using the above recipe) but...I


added the spices from a MILD (I don't care for ';HOT';) Buffalo


Wings packet...(the kind you get to bake in the oven).....I thought it


was really good.....(but you/I can't find a 'bad' way to fix chicken).











CRUNCHY ONION CHICKEN





1 1/3 cups French鈥檚 Original French Fried Onions


4 boneless skinless chicken breast halves


1 egg, beaten





LIGHTLY CRUSH:


Onions in a plastic bag.


DIP:


Chicken in egg


COVER:


With onion crumbs, press firmly to adhere to chicken.


BAKE:


Preheat oven to 400 degrees.


Place chicken on lightly greased baking pan.


Sprinkle with additional onion crumbs, if desired.


Bake for 20 minutes or until no longer pink in center.
EASY EASY BAKED PEPPER CHICKEN





6 uncooked chicken breasts


2 cups onions and peppers (thinly sliced)


2 tsp pepper


2 tsp basil seasoning


1/4 cup olive oil, separated in 1/8 cups





Preheat the oven to 350 degrees. Line a deep baking pan (9x13) with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking Sprinkle foil with some of the pepper and basil Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken Sprinkle the chicken with remaining seasoning, to taste Sprinkle the chicken with the onions and peppers.


Important: Cover the pan with another layer of foil, and seal the sides. Bake for 30 minutes, or until the center of the chicken is no longer pink.





It'll be the juiciest, most tender baked chicken you've ever had - no need for a knife. Best over rice and sauteed vegetables.

FAST %26amp; EASY CHICKEN %26amp; NOODLES





1-12 oz bag egg noodles


2 tablespoons butter or olive oil


spices (your preference)


7 oz cut chicken breast in foil bag or 2 small cans chicken


2 cans cream of chicken soup


1 can cream of mushroom soup





Stove Top preparation:





Start boiling noodles (direction on package).





Add butter or olive oil in a separate pan, add chicken and spices.





Heat chicken; (if you are using raw chicken let it cook fully).





Add soup to chicken and spices and simmer over low heat. After noodles are cooked, drain and add to chicken and soup, mix.





Cook's Note: If you don't have egg noodles on hand, try tossing angel hair directly into the soup!





Suggested seasonings for this soup are: (one of the following or as many as you like) fresh garlic, minced, onion, chopped baby carrots, chopped celery, green onion, scallions, minced fresh parsley and a pinch of rubbed sage. If you are using chicken breast, don't allow the broth to boil; just simmer, adding the chicken breast last and cooking only until done.





This recipe is great! It is quick and easy and the family loves it! You can change it up and use different soups and even add cheese! It tastes home-made!

Chicken and chips with salad (30 minutes)





1 chicken breast per person


1 fist-sized potato per person


Steak seasoning (equal parts pepper, salt, paprika, garlic powder, onion powder)


Salad mix (or whatever leaves you want)


Tomatoes


Capsicum


Feta or curls of parmesan cheese (optional)


Salad dressing





Put kettle on full to boil and turn oven onto 200C on fanbake. Peel potatoes and slice into thick wedges (I slice in half lengthways, then each half lengthways into 4 wedges). Put boiling water in large pot on stove, add salt and cover until boiling again. Add potato wedges (separate them) and bring to boil again. Boil for 4 minutes.


While potatoes are boiling, put a big dollop of olive oil in roasting pan and put in oven to heat. At 4 minutes, remove potatoes from stove, drain, and leave for a minute to dry out. Put lid on pot and shake roughly to crumble corners of wedges.


Remove roasting pan from oven and put on top of still-hot stove (so oil stays hot). Add potato wedges and toss quickly in hot oil. Sprinkle steak seasoning over top liberally and toss to coat. Put back in oven.


Wedges will take 25-30 minutes, so while they're in there, butterfly chicken breasts (cut lengthways through the thick part, not quite all the way through, so the attached part acts like a hinge and you can open out like a butterfly). Coat liberally with steak seasoning (add a bit of chilli powder if you want it hot) and lay out on a rack. Spray with olive oil, and put rack in oven 15 minutes before you estimate potatoes will be done. Turn once during cooking time, spraying top surface with oil again.


While they're in, slice and toss salad veg - don't dress until just before you serve.





Serve with garlic mayo and tomato sauce for the wedges.
GARLIC FRIED CHICKEN





INGREDIENTS





* 2 teaspoons garlic powder, or to taste


* 1 teaspoon ground black pepper


* 1 teaspoon salt


* 1 teaspoon paprika


* 1/2 cup seasoned bread crumbs


* 1 cup all-purpose flour


* 1/2 cup milk


* 1 egg


* 4 skinless, boneless chicken breast halves - pounded thin


* 1 cup oil for frying, or as needed





DIRECTIONS





1. In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.


2. Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.


3. Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve

Put some uncooked diced chicken in an oven dish, throw in a load of sliced mushrooms and pour over a can of Campbells condensed chicken or Mushroom soup (I personally prefer the chicken one.) Cover and cook in the oven for about 40 mins or until chicken is cooked!! (you will need to take out and stir occasionally!! Lovely served with rice or Jacket spuds and veg!!! (You can also use the Low fat Campbells condensed aswell if you want a healthy low fat meal.... tastes just as good!!! )
Chicken %26amp; Apple Fajitas





Ingredients





450 g (1lb brambly apples peeled, cored and thickly sliced


Juice of 1 lime


1 tbsps oil


2 medium onions thickly sliced


2 gloves garlic, finely chopped


1 鈥?2 red chillies, deseeded and finely chopped


1 tsp coriander


1tsp cumin


450 g (1 lb) chicken fillets cut into thick strips


Seasoning


1 tbsps fresh coriander, chopped


8 wheat tortillas





Method:





1. cut each apple slice in half and put in a bowl with the lime juice and toss together


2. heat the oil in a large frying pan, add onion and cook over a high heat for 2 mins, add garlic, chillies, spices and chicken then fry stirring for about 5 minutes until chicken is golden. Lift chicken out of the pan and set aside


3. Add apple with lime juice and 5 tbsps of water to the pan and cook with the onions for 3 minutes.


4. Return the chicken to the pan and continue to cook for a further 5 minutes, until apples are tender but still hold their shape


5. Heat the tortillas as directed on the pack. The quickest way is to transfer them to a plate, cover with film and microwave on high for 20 鈥?30 secs


6. Season filling with salt and pepper, then add fresh coriander.


7. To serve, place 2 heaped tbsps of filling in each tortilla, roll up and enjoy!
Chicken with passata, herbs, onions, etc very cheap , healthy and easy.
