Need Authentic Chicken Recipes From Around The World?

Chicken casserole with almonds and pinenuts


(Spain)





Ingredients





1 chicken in pieces.


6 small potatoes


2 ripe tomatoes


3 medium-sized onions


6 desert spoonfuls of olive oil


100 grams of pinenuts


100 grams of almonds


1 small glass of white wine


Juice of half a lemon


2 cloves of garlic


1 sprig of parsley


1 sprig of thyme


Pepper


1 chicken stock cube


salt


Direction





1: Prepare an oven dish amde of glass or clay. Rub the bottom with a clove of garlic and then put the chicken pieces inside it.





2: Peel the potatoes and onions. Cut them into large pieces and put them in the oven dish with the chicken. Do the same with the tomatoes.





3: Chop the garlic and sprinkle on top with small pieces of parsley and thyme. Add the lemon juice, pinenuts, almonds, pepper and salt.





4: Disolve the stock cube in a small glass of warm water and pour onto the chicken. Then pour on the glass of white wine and the oil. Try to make sure that all these liquids are poured over the ingredients as evenly as possible.





5: Put the oven dish in the middle of the oven and leave it to cook for an hour and a half at 180潞. When all the ingredients are cooked, take the oven dish out of the oven and serve.











Acapulco Chicken

Ingredients





1 cup long grain rice, uncooked


1/2 pound fresh mushrooms, sliced


6 chicken breast halves, skinless and boneless


1/2 cup chopped celery


1 medium onion, chopped


1 tablespoon parsley leaves


1 3/4 cups hot water


2 teaspoons chicken base


1 (5.3-ounce) can evaporated milk


1 (10-ounce can) tomatoes and chilies


2 cups Cheddar or Monterey Jack cheese


Salsa for garnish





Direction





1. Preheat oven to 375*F (190*C).





2. Layer in a greased 13 x 9 x 2-inch baking dish the rice, mushrooms, chicken, celery, onion and parsley.





3. Combine the water, chicken base, milk, tomatoes and chilies. Pour over the chicken.





4. Bake, uncovered for 45 minutes. Remove from oven and top with cheese and bake for another 5 minutes, or until cheese has melted.





Serve with salsa as a garnish.

Chicken Tikka, if I remember correctly, is Mughlai food (from the period of Mughal (muslim) rule in India).





One easy and delicious recipe that I like is Yogurt-Pepper chicken.





Ingredients:


- Checken on the bone, preferebly legs.


- 1 cup yogurt


- salt %26amp; pepper to taste





Preparation:


- beat the yogurt, mix a little water if required.


- mix salt and pepper into the yogurt


- marinate the chicken in the yogurt over-night or atleast 4 hours.


- cook the chicken and yogurt in a saucepan..





You can either make this dry (by letting all the yogurt evaporating) or you can cook it so that it has a yogurt sauce by using 1 tablespoon of all-purpose flour as a binding agent.

Authentic Chicken Marsala Recipe


1/4 cup flour


1/4 tsp salt


1/8 tsp freshly ground, black pepper


1/2 teaspoon dried oregano


4 chicken breasts, boned, skinless


4 Tbsp olive oil


1/2 cup Marsala wine


1 cup sliced mushrooms


1/2 cup chicken stock (or 1/4 cup cooking sherry)


1/2 lemon





Mix together the flour, salt, oregano, and pepper.





Pound the chicken breasts gently (with the flat side of your meat mallet).





Roll the chicken in this until well coated.





On medium-high, heat up the olive oil and brown the chicken on both sides. Then put chicken onto a plate. (An option is to keep the chicken int he microwave at 10% power for five minutes.)





Pour wine into the oil and warm. Mix in the mushrooms, chicken stock and juice of the lemon. Turn the chicken over to get it well coated with the sauce. Simmer for 10 minutes. (If you cooked the chicken in two batches, put all the chicken back in the skillet before you add the Marsala.)





Add in chicken and cook covered another 10 minutes.





Note: Serve with a simple pasta dish such as fettuccine with butter and Parmesan cheese.
One of the easiest, ethnic chicken recipes I know is for Chicken Curry, from India/Pakistan. This recipe is quick and pretty versatile.





Put a couple tablespoons of oil into a large pan over med-high heat. Once heated, add a diced onion and cook till translucent.





Sprinkle a tablespoon or two of curry powder (depending on how much heat you want) over the onions and cook for a minute.





Add a small can of diced tomatoes or a couple diced fresh tomatoes and bring to a simmer.





Add about a pound of chicken. Pretty much any kind will work: chopped skinless boneless, pieces with bones in and skin on, legs/wings, etc.





Add any other veggies that sound good. Some diced hot peppers will add more heat. Potatoes, cauliflower, zucchini, or pretty much anything else would be good. Veggies don鈥檛 have to be added but make the dish more of a meal in itself.





Cook till chicken gives off clear liquid when pierced with a knife, veggies are tender and oil starts to separate from the curry sauce a bit.





Serve with some cooked rice or fresh naan (Indian flat bread).

This recipe is from Guam.. where my husband's family is from.. it's real simple..





Buy a large package of chicken drumettes and add 1/2 C vinegar, 1/4 C soy sauce, 1/2 of a small onion, finely diced and some pepper. Marinade for several hours, then grill until done. The color will be dark, but that's normal. I don't know the official name of this, but it's usually made with whole chicken pieces, but I prefer to use drumettes since they soak up the flavor better.
